After making my Coffee Cupcakes I thought it was only fair to swap sides and make tea the main feature of one of my recipes. As much as I love coffee I am also a HUGE tea drinker and think there is nothing better than a comforting cup of tea to help you get through a stressful day.
I am a girl of simple tastes and Yorkshire Tea with a dash of milk has always been my favoured blend. However I do have to say that I am partial to a cup of peppermint tea and sometimes Pukka’s matcha green tea if I have decided I am going on a health kick (this rarely lasts very long).
For this recipe I went for Early Grey, orange and chocolate as they are flavours that compliment each other well; you can actually already get a Earl Grey and orange blend of tea, and who doesn’t like the addition of chocolate?
I often find that as tasty as biscuits are, they are not the most exciting things to look at and therefore I tried to jazz these guys up a little bit by making them look like teabags- this also makes them great for dunking.
Makes: 11 Biscuits
Prep Time: 1 Hour
Ingredients:
225g Plain Flour
115g Corn flour
225g Butter (softened)
115g Icing Sugar
The zest of one orange
The tea from one Earl Grey Teabag
A 100g bar of chocolate of your choice
Method:
1. Preheat the oven to 130°C/266°F/Gas Mark 2
2. Cream together the butter and sugar
3. Mix in the orange zest and Earl Grey tea.
4. Add the plain flour and corn flour and mix.
5. Bring the dough together with your hands and then place on a floured work surface.
6. Roll the dough out and then cut in to teabag shapes using a paper template.
7. Poke a hole in the top of the biscuits for thread to go through.
8. Place them on to lined baking trays and bake in the oven for 40-45 minutes.
9. Remove from the oven and leave to cool.
10. Melt the bar of chocolate in the microwave and then dip the biscuits in the melted chocolate.
11. Leave chocolate to set.
12. Make labels out of paper and thread and then thread through the holes in the top of the biscuits.
Time for tea I think…
These look great. So inventive. My favourite part though is they even come with a little string for dunking. I’ll be giving these a go for sure!
