Recipe: Jammie Dodger Cupcakes

I think I subliminally decided to do a Jammie Dodger themed bake following Flushed Away’s appearance on Netflix the other week. For those who haven’t seen it, it’s a film about a posh rat called Roddy who ends up being flushed away into the underground sewer world of Ratropolis. While down there he meets another rat called Rita, who runs a scavenging business from her boat, which just so happens to be called the Jammy Dodger.

Combine this subliminal messaging with the fact that I think Jammie Dodgers are delicious (sandwiched biscuits are always far superior to their single layered counterparts) and you have the inspiration behind the Jammie Dodger cupcake; vanilla sponge with a jammy centre, vanilla buttercream with a jammy topping and finished with a pair of Jammie Dodgers. It’s perhaps not for you if you don’t like jam.

Prep Time: 1 hour including cooling time

    1. Hello! I would store them in an airtight container at room temperature HOWEVER it is best to put the jammie dodgers on the morning you are serving them, otherwise they will go soft and soggy in the container
