I think I subliminally decided to do a Jammie Dodger themed bake following Flushed Away’s appearance on Netflix the other week. For those who haven’t seen it, it’s a film about a posh rat called Roddy who ends up being flushed away into the underground sewer world of Ratropolis. While down there he meets another rat called Rita, who runs a scavenging business from her boat, which just so happens to be called the Jammy Dodger.
Combine this subliminal messaging with the fact that I think Jammie Dodgers are delicious (sandwiched biscuits are always far superior to their single layered counterparts) and you have the inspiration behind the Jammie Dodger cupcake; vanilla sponge with a jammy centre, vanilla buttercream with a jammy topping and finished with a pair of Jammie Dodgers. It’s perhaps not for you if you don’t like jam.
Prep Time: 1 hour including cooling time
Makes: 12 Cupcakes
Ingredients:
200g Stork
200g Caster Sugar
4 Eggs
200g of Self Raising Flour
1 tsp of Vanilla Extract
250g of Unsalted Butter
500g of Icing Sugar
1 tsp of Vanilla Extract
Hartley’s Seedless Strawberry Jam
Multipack of Mini Jammie Dodgers
Method:
1.Preheat the oven to 170°C/340 F/ Gas Mark 3
2. Cream together the stork and caster sugar
3. Mix in the eggs and vanilla extract
4. Mix in the flour until just combined.
5. Line a 12 hole muffin tin with cupcake cases.
6. Spoon the cupcake mix into the cases either with tablespoon or an ice cream scoop.
7. Bake in the oven for 20 minutes, until the cupcakes are well risen and springy to the touch.
8. Leave the cakes to cool and get started on the buttercream.
9. To make the buttercream, beat the butter until it is pale and smooth. Add the vanilla extract.
10. Gradually add the icing sugar a bit at a time and beat until the buttercream is light and fluffy.
11. Cut the domed tops of the cupcakes and then cut a hole in the middle of them.
12. Fill the holes with the Hartley’s strawberry jam.
13. Fill a piping bag with buttercream and pipe the icing on to the top of the cupcakes.
14. Pipe blobs of jam on top of the cupcakes and then top with a pair of mini Jammie Dodgers.
These look impeccable! Great styling.

I am wondering, where to store them if I need to bake tomorrow for serve Saturday? I live in England.

Hello! I would store them in an airtight container at room temperature HOWEVER it is best to put the jammie dodgers on the morning you are serving them, otherwise they will go soft and soggy in the container
