These cupcakes were made from blackberries foraged from the hedgerows and apples grown in the garden. This got me thinking about what other interesting things I could potentially forage/grow to put in cakes. Raspberries and strawberries would be the obvious choices. However in terms of foraging for more interesting things like bilberries and cranberries.. after some research I came to the conclusion that I would most likely end up poisoning someone. So many berries look alike and anyone who knows me knows it would be just my luck to accidentally confuse the deadly ones with the safe ones!

I am back…temporarily. Since my last blog post I have completed my first year of nurse training and I go back to start my second year in a week! I have been staying at home for the summer holidays and working in the local hospital as an auxiliary nurse.While being at home I thought I should make the most of having a proper kitchen to bake in before I go back to the joys of living in student halls.

It is safe to say that I have been a bit of a busy bee this Summer…

In a few weeks time I am leaving Edinburgh and moving up to Inverness where I will be going back to University to study Nursing. Therefore I have been busy working lots of overtime to try and save up money, packing up my flat and also spending lots of time with my friends and boyfriend before I leave. Unfortunately packing up my flat means that my cake tins, stand mixer and all other baking bits have been boxed up (sadly shared student kitchens and the Nursing student schedule are not really conducive with baking/blogging!) This means that this is the last bake I will be sharing for a while. I hope you like it…

Wimbledon Cake

This is the recipe for a cake I made a while ago for the Wimbledon 2015 final. Yes, I know that was in July and it is now September… what can I say, its been a busy summer. Anyway, I felt like I had to feature it as it’s probably one of my favourite cakes that I’ve made due to the simplicity of the recipe and the effectiveness of the decorations which I am proud to say are all edible.

I actually took this cake into work to be enjoyed in the staff room during the final between Djokovic and Federer and it was all completely scoffed which is always a sign of a successful recipe in my book. It actually consists of three separate recipes; the actual cake and then the meringue kisses and lemon curd macarons that go on top. I also made some chocolate ‘nets’ out of melted chocolate. You obviously don’t need to make all of these things, but if you do, be sure to give yourself plenty of time!
